  • Your Approach to The Word (Truth): "Truth is... what I RECEIVE."

  • Examples: It is what you can get out of it. How can Jesus make 'you' feel good? A girl said, "I gotta get my worship fixed." She went to worship then left without listening to the Word or being engaged... she went simply for herself.
#3 - CONVENIENT Christianity
  • Description: Easy, short-term, transient, excuse oriented. 
  • Your Approach to Jesus: "I follow Him if... He APPEASES me."
  • Your Approach to The Word (Truth): "Truth is... what I ACHIEVE."
  • Your Approach to Scripture: It is "DIFFICULT."
  • To you, Jesus is: OPTIONAL.
  • Examples: You want Jesus to fix your problems ASAP and 'need what you need,' 'want what you want.' You will give you're all to Him if you feel He is giving what you want in a timely manner. 
#4 - CRISIS Christianity
  • Description: Isolated, immature, victim, poor decisions. 
  • Your Approach to Jesus: "I follow Him if... He HELPS me." 
  • Your Approach to The Word (Truth): "Truth is... what I am RELIEVED of." 
  • Your Approach to Scripture: It is "HIDDEN."
  • To you, Jesus is: AVAILABLE.
  • Examples: You come to God only when you desperately need something. When you experience hardship, then you run to the Father. You find Jesus always there and can escape from whatever you are going through. You tend to not follow Him for Him.
#5 - KINGDOM Christianity
  • Description: Sonship-covenant, submission, obedience. // Assignment- training, mission. 
  • Your Approach to Jesus: "I follow Him... because He is LORD." 
  • Your Approach to The Word (Truth): "Truth is... His Word."
  • Your Approach to Scripture: It is "TRUTH."

Baby Testimony

Let's just start off with the fact that this baby was not a surprise. This baby is a blessing and answer to God's will (as are all children). I figured this was quite a fun story, so might as well share it!

Around the weekend of September 20th, 2013, I was having thoughts of "Hmm.. I wonder if I got pregnant, if we could still go to Field School in Mozambique, Africa?" Etc. etc. That Sunday, Dan and I were driving home to Dallas from Houston. He randomly started talking about everything I had just previously thought of that weekend. We both were curious if this was from the Lord. And of course like everything, we put it to prayer. That night we sat on our bed and asked God to speak to us about these thoughts. We quieted our minds, hearts, and focused on what Holy Spirit was saying. I received a picture from the story of Moses. All it was, was a wicker basket (like what Moses would have been in), in a river. I knew a baby was in it but did not see the baby. Dan asked if I had received anything and I shared the image I had. I did not ask him if he had received though. The next day comes along and around lunch, I decided to ask. He tells me that during the time of silence, he hears "I need him on the earth now." Dan is confused and thinking.. 'Okay, this is just my own thoughts because we really want to have a girl first (especially because my mother-in-law had all boys). Can't be God.' The voice got louder and more authorative and he felt the presence of God confirm to him. Once Dan told me this, I was way suspicious because we have heard a story of a teacher who had the same thing happen to him. It just didn't make sense in my natural reality. Dan went on to say that my picture confirmed to him about the fact of the baby being a boy (because Moses and Dan hearing 'him').

I truly struggled with these new thoughts racing through my mind. I was nervous and in disagreement with this word. Although, at the same time I was open to what the Lord might want to reveal. That day we were also in class and learning Hebrew which we had never gone over in that class. The second place my eyes wandered to was the word "TET." TET's picture is a "wicker basket" and means "life in the womb." I thought that was interesting because wicker basket = life in womb and the image I received was a baby in a wicker basket. Later, our teacher goes on to say that "Mother" in Hebrew means "Strong River." Getting a little weird now! Lets put it all together... Wicker Basket (life in the womb) in the Strong River (mother). Wicker basket in the strong river.. life in the mother! Buuuut... really??

We decide best thing to do at this point is ask for advice from our good friends who we could trust and who have children of their own. We explain all of this to them and ask if we are "over-spiritualizing?" They truly believed it was from the Lord and all of it was confirmation to His call. Also, that no matter what, in it being His will, that He would provide all things.

That night, we tell God, "Okay Lord, You know our situation and what we are feeling. We are going to put this into YOUR hands and our faith IN You. If we have this baby, we do, if not, we won't. Be Your will unto us." The next day, we grabbed a pregnancy test just to keep at our house whenever we felt we would need it. Two weeks go by and one Wednesday afternoon I felt impatience and anxiousness come upon me. It was the day of starting a two day water fast. I grabbed out a pregnancy test and decided to take it. A faint line indicating pregnancy appeared. I woke up Dan from an afternoon nap and asked what he thought. He said he believed I was and to take the other one we had. I did and it was even a darker faint line. (FYI: faint lines indicate pregnancy no matter what). This is unusual because one, I was only two weeks into pregnancy, and two, usually the HCG hormone (which is only in your body while pregnant) showed up at that time. The test suggested taking them in the morning and 5 days at the most before your missed period. Dan and I sure were excited and nervous. ((Thankfully we found this out so I didn't do the water fast which could have potentially hurt the baby... pretty good timing if you tell me)). We went to the store to buy a better brand and would try it the next morning. Sure enough, the next morning that pregnancy test had a good line on it. I then scheduled a Dr's appointment to confirm. I went and again, PREGNANT! WOOHOO! Be it unto us God! Such a glorious time in the Lord.

The day we went to the doctors, we filmed a "revealing" video to show to our family who was coming up that very night to Dallas. The day went on and work was terrible! A lot of stress with children and pressure on us. We went on a couples date night which was fun but when we got home, our day got harder. I was exhausted and the videos we made were not well done. So many technical problems and we had to re-take a scene about 3-4 times! The family didn't get to our home till midnight. We had to make up our minds to have a good attitude and embrace the joy coming ahead. Once the family arrived, we had them sit down and watch the video. They were SO excited about having a grandchild and a nephew. After the hard day was done with, we had peace and could rest.

We have been told quite a few times to be careful to say anything because it is "early" in the pregnancy and can result in miscarriages easier. Want to make sure it "sticks." NO! We rebuke and cast down such words. God told us what He wanted and His will has come forth.. we will not DOUBT what the Lord has done and be open to the LIES of the evil one! NO SIREE! We told everyone we could think of then posted it on "facebook" of course. People were glad and excited and it has been a great experience.

One day I leaned over to Dan randomly and told him, "Hey, just want you to know that I have made up my mind and decided that we are never going to lack. Okay?" I also went on to make up my  mind that I am not going to be open to nausea and morning sickness. I will admit I have had queasiness but have not thrown up, glory to God! After a few exhausting and draining days, I was completely fatigued. I made up my mind yet again and commanded my body to line up with the Word of God and reminded myself of who I am in Christ and what the WORD says about me. Since that day, yes I have felt tired, but I have not felt fatigued and drained like those few days before I prayed. Power is in your words. Power is in your faith. I do NOT have to live in sickness and in an uncomfortable state, so why would I? Why settle for less then what the Lord says? I am in a NEW covenant, hallelujah!
This child is a WARRIOR and his momma is the same! We shall raise the child in the way he should go and he will NOT depart from it.

YAY GOD! Praise be to You Father! Glory to His name and His all sufficient plans.
My encouragement from this experience is... be in tune with Holy Spirit, be obedient to the Lord.. no matter what He asks, rather you understand it or not. Don't make hasty decisions without prayer and peace. Don't listen to what others tell you, contradictory of His Word and Will. Blessed are the ones who hear His voice and obey Him.

James - Chapter 1 ((JOY&TRIALS))

I recently read the book of James and was totally captivated by the content. It's amazing how we can read a book of the Bible over and over again and get new revelation every time. I went on to read 1 Peter but God drew me back to James to do an in depth study on it. I put together my revelation and thoughts I view as helpful. In this post I am just going to go through just chapter 1 of James and my "commentary" and "side-notes" within the verses. ((You can read along in your own Bible or can go to a website)).
**I am going through the process just as much as I state in anything within this post. I do not count myself "higher" than others but share my encouragement and knowledge within my writing.

[[1:2]] Be overly joyful in the hard times! ((Easier said than done..)) Usually means God is working something out of you and prepared to see what "feelings" are going to occur when  your next to the fire. Are you running to God in the good times or only the trials? Count it ALL JOY!
Perfect example of counting it joy in tough situations!


[[1:3-4]] Once again we see our FAITH is being tested. How bad do we want it? How much do we want to prove our love to Him? The outcome of our faithfulness is PATIENCE! A fruit of the Spirit... which is required and needed for everyday life. How can we minister to someone if we do not slow down and patiently watch and help them grow? If we allow this work to happen, such as: laying down our feelings, focusing on joy in our faith being tested in trials... THEN we will lack nothing!
Because we are focusing on Him and not self, we gain completion. Just to note: Patience is also without complaint. (Truly hard at times but He is who strengthens us).
Ultimate Patience...


[[1:5-8]] It is very important to not just ask God for something you hope may come. But we must ask IN FAITH & EXPECT God to move! If He feeds the birds, won't He feed you? 
(Matt. 6:26). If He gives gifts better than we could possibly give to our own kids, how much more will He give us? (Matt. 7:11). Verse 7 of James directly says it all... do not let us  "suppose" He will give but KNOW it. We must not go back and forth in disbelief and minister to others in the same matter. God HATES lukewarm and "double-minded" (someone who is like wave tossed to and fro). You are IN or you are OUT. You serve GOD or you serve this WORLD (the devil).
It seems to me He has provided well for the birds...


[[1:9-11]] "Let the lower man honor his position." The low should be proud of their title and count it joy in what they are presently stable in. If the rich man on the other hand fails to follow in humility, he will perish. As my wise YahYah says, "Don't be prideful IN your humility." WOW! Even in being successful, do not think about yourself in being arrogant or in being so arrogant that you're the best at being humble. PRIDE causes you to fall. 
Jesus is the prime example of humility


[[1:12-16]] Many times we say, "Why is God putting me through this?" or, "Why would God put that in front of me to tempt me?" Sometimes we can justify our actions in saying, "Oh well, God wouldn't tempt me with (insert) so that must indicate it is okay for me to partake in it." The WORD is TRUTH! And the word says He is NOT a tempter. James speaks in how we are only tempted when we open ourselves and doors up to this world. God does not put you in hard times for His entertainment nor does He want the enemy to win in obstacles through your life. BUT He does allow things to happen. He does not cause things to happen, He allows things to happen. Reasons because He will be glorified in the end of it, that it will become a testimony, that your faithfulness will shine through and prove love to Him. Once again, thankfully we are rewarded with the crown of life for enduring righteously! KEEP PRESSING! --Don't miss it.. it could be right around the corner..

**Sidenote: Looking for answers and a path? God may only reveal step by step because He knows you could not handle the future plans right now. If He gave you the fullness of it, you could possibly concentrate on way up there instead of the current journey you are on now, which is just as vital in getting you to the next step. 
Enduring temptation..


[[1:17-18]] There is no change or obscurity in God. He is constant, unmovable  and stable! The verse says, "Father of lights?" 
"Lights" in the greek in this verse is "phos" meaning (in Himself), unkindled and unquenchable. WOO! He is in Himself, pre-existent. He is "light/phos" That is awesome!
Next, In Gods PLAN, we were brought forth. Our existence did not bring Him by surprise! We were brought forth in His truth - faithfulness- a set event of what He knew was to  happen. He brought us forth in the means of salvation! We are the first fruits  the front most new and honored creations of creatures or mankind.
In some commentaries on these verses, the first fruits could mean: Jesus came to the Jews first- Jews being the first fruits. Then the creatures being the Gentiles. 
I see it as: He brought us forth in salvation as the church, being foremost in front of all mankind... which is a glorious and hard thing in the fact that the church will be judged FIRST. 
We are held accountable to the knowledge of what we obtain. 

**Sidenote: You're not 100% sure if the thing you want to partake in is okay or not okay? I would advise not to take part in the questionable situation. Reasoning because I would rather lean on the side of caution. I would rather NOT do something questionable and end up being okay in the end instead of doing it and having end up being in sin or negative behavior. ((We are held accountable for our knowledge.))
Example... If your three year old does something you say not to do out of curiosity and your 13 year old does the same thing when they have already been informed previously about this rule, who is going to be most held accountable and judged more harshly?...
Be a leader in your knowledge and bring others into righteousness.


[[1:19-21]] WE are called to be listeners and to have calm tempers with wisdom. 
Do you find yourself battling with anger? 
First I would suggest surrendering it to God (daily if you must). I would then find verses on how Christ views you and anger. Write them down on note cards,  keep them by your bedsides, your purse, or your pockets. Pull them out and read them out loud when you feel those angry thoughts and feelings being aroused. 
FAITH comes by hearing, and hearing by the Word of God. The Word builds us, reminds us, lifts us up, and influences us.
Do something about your struggles so you can be used even mightier!
Verse 20 says "the wrath of man" - It does not mean just the action of anger or abuse. When translated in the greek, "wrath" here means "the DESIRE and how one thinks in the mind (compared with punishment)." The one's who have negative and angry thoughts as well as abusive actions (wrath) etc, cannot produce RIGHTEOUSNESS (which IS God). 
Thus, not being able to be Christ like in this area. You cannot stand up rightly or in moral standing with enduring anger in your heart. ((Similar to how in communion you should not partake in eating the body or drinking the wine -blood, with bitterness in your heart. Being because the Word tells us to make things right with our brother.)) The Word is just and truth!

Here are some verses & prayers you can speak over yourself when you feel any angry thoughts, emotions, or actions coming about:
((This is a POWERFUL act)).

John 14:27 - " Peace I leave with you, My peace I give to you; not as the world gives do I give to you. Let not your heart be troubled, neither let it be afraid."
PRAYER: Peace He has left with me and has given to me, not as the world gives has HE given to me. My heart will not be troubled or afraid!

James 1:19 - "So then, my beloved brethren, let every man be swift to hear, slow to speak, slow to wrath..."
PRAYER: I will be swift to hear, slow to speak, and slow to anger!

Ephesians 4:26 - "Be angry, and do not sin: do not let the sun go down on your wrath.."
PRAYER: In my anger I will not sin, I will not allow anger to stay within me throughout my day or overnight. I will confide in Jesus to help me.

Galatians 5:22 - "But the fruit of the Spirit is love, joy, peace, long suffering, gentleness, goodness, and faith."
PRAYER: I contain the fruit of the Spirit! I have the fruit of love, joy, peace, long suffering and patience, gentleness, goodness, and faith!

2 Timothy 2:24 - "And a servant of the Lord must not quarrel but be gentle to all, able to teach, patient..."
PRAYER: I must not bicker and quarrel, but I will be gentle and nice to others around me so I can use the patience He has given me and be able to minister to others.

John 4:24 - "Worship in Spirit and in Truth."
PRAYER: I will worship in Spirit and Truth!

Ecclesiastes 7:9 - "Do not hasten in your spirit to be angry, for anger rests in the bosom of fools."
PRAYER: I will not be angry any longer because anger rests in fools and God has called me for a higher purpose!

1 Peter 5:7 - "Casting all your care upon Him, for He cares for you."
PRAYER: In my anger and frustrations, I will cast my cares upon You Lord! I do this because I know that you care for me!

Proverbs 25:28 - "Whoever has no rule over his own spirit is like a city broken down, without walls."
PRAYER: If I don't control my anger according to the Word, I am broken and have open doors. I will confide in You God to help build me up in my frustration.

Ephesians 5:11 - "And have no fellowship with the unfruitful works of darkness, but rather expose them."
PRAYER: I will not open doors to the darkness around me through my anger or other unholy emotions and actions in my life. I will expose, confess, and turn from them!

Galatians 2:20 - "I am crucified with Christ; it is no longer I who live, but Christ lives in me; and the life which I now live in the flesh I live by faith in the Son of God, who loved me and gave Himself for me."
PRAYER ^Above

James 1:2 - "Count it all JOY."
PRAYER: I count it all JOY! All trials and emotions, I will press through and count all joy!

Proverbs 16:32 - "He who is slow to anger is better than the mighty, and he who rules his spirit than he who takes a city."
PRAYER: I am better than the ones who are mighty and powerful when I am slow to my anger and in control of my emotions. I conquer mountains when I use the fruit of the Spirit!

2 Timothy 3:17 - "that the man of God may be complete, thoroughly equipped for every good work"
PRAYER: God help me with this anger and emotions that I may be complete in YOU and equipped for all good works for Your GLORY!

Colossians 1:10 - "that you may walk worthy of the Lord, fully pleasing Him, being fruitful in every good work and increasing in the knowledge of God.."
PRAYER: I am in control of my emotions and anger so I may be worthy to walk in Your paths Lord, that I may be pleasing to You, and that I would bring forth fruit in EVERY good work and I will increase in the knowledge of You Father!
Anger is damaging.


[[1:22-25]] BE DOERS! What is the point of telling your friends, " I wish I could help!" When you really can- you are just being selfish about your own time. Better yet, what about on Facebook? Commenting: "Aww I'll be praying for you and your family." And then you don't even pray. Acknowledging a thought is NOT prayer. Asking God to turn a situation and having passion that God would move is prayer. Speaking to Him in joyful times and hard situations is prayer. Just feeling "sorry" for someone will not cut it. Equip yourself and MOVE! The Word says you will be BLESSED for doing so!
Care for others around you.



[[1:26-27]] Living in religion with do's, don'ts, and with rules and regulations is not what we are called to do. Being religious is just going through the motions and trying to be someone you are not called to be. We are to live in freedom, not bound up in chains by four walls of confinement and judgment. Break out of the box and impermeable ideas. Lean on the Spirit and how He would guide you, not unto man. ((Colossians 3:23// Romans 8:5)). Simply stated, we are to help the widows and orphans. We are called to love the unlovable,  help the helpless, and bring hope to the broken. We are called to LOVE one another. 
Love one another.

Trying to eat better? Me too.

I have recently come into a new "lifestyle" of eating. 
In this post I am going to give MY personal advice and knowledge/research I have done on the subject. 
My mother has gone on a no sugar fast that God spoke to her to do. I've been pulled into this fun adventure! Been challenging but worth it with the added energy and healthy feeling!
Within three weeks of being on no sugar (including fruit), she has lost 10 pounds. 
I suggest after reading this information you pray that God would reveal to you the areas you need to change and ask for strength and discipline to help you get there.

Our bodies are a temple and we should treat them that way. 
If you give someone something precious, you are going to want them to handle it with care and treat it to the best of your ability.
Stop saying you want to change and do something about it! 
Even if it's baby steps at first, at least you're stepping!

So let's take a look in that pantry!!

::Drinks::
What should I stay away from?

  • ALL SODAS (SUGAR AND CHEMICALS)
  • Energy drinks.. probably not the best either


What can I have?

  • Coffee.. I believe is okay if not loaded disgustingly with creamer and heaps of sugar
  • Tea
  • WATER! (8cups per day.. I have seen some girls use two main water bottles per day and labled with the time they should have dranken a cup by)
  • Unsweetened Almond Milk is WAY better for you!


::Cooking Essentials::
What should I stay away from?

  • White flour (often listed as "wheat flour")
  • Wheat flour (because it turns to fat in the body)
  • Margarine
  • "Sweet n Low" or other artificial sweetener--made from chemicals with aspertane which is TERRIBLE for you

What can I have?

  • Stevia & Truvia as your sugar -- not sure to bake with but is plant based and good for you
  • Coconut Flour
  • Almond Flour
  • Spelt Flour
  • Regular Butter


::Breads/Carbs/Grains::
What should I stay away from?

  • Whole wheat
  • White flour
  • Sugars
  • No "instants" ex: 5min rice
  • Wheat flour


What can I have?

  • Non-GMO whole grains 
  • Ezekiel Bread (Including tortillas, etc)
  • Ingredients including "sprouted wheat" ((Personally would do sprouted wheat or bread made with spelt etc FIRST CHOICE.. whole grains second choice))
  • Brown rice (the kind you cook for 40min)
  • Organic pasta
  • Pasta made from vegetables etc
  • Quinoa 
  • Couscous


::Meats::
What should I stay away from?

  • Processed with preservatives and steroids with added hormones 
  • From what I have researched.. TYSON is full of hormones and have not treated their animals correctly 


What can I have?

  • Minimally processed meats
  • ((Can get expensive but try best to find what you can))
  • More red meats



::Fruits & Vegetables::

  • Mashed Cauliflower is good!
  • Spaghetti Squash is A LOT less calories and healthy
  • Corn and potatoes turn into starch and sugar then store as fat in your body
  • Use fruits wisely... don't overload them with more sugar


::Other::

  • No high fructose corn syrup
  • No hydrogenated oils
  • Use ALMOND BUTTER instead of peanut butter
  • Chia seeds are great! Throw them in meals
  • What sugar does to you:
  • Lentils are good!
  • Chickpeas (aka garbanzo beans--can find in a can)
  • Condiments.. just be wise with portion and what is in it-try to do all natural
  • Salad dressings.. it's okay to have a few grams of sugar but try to find more healthy ones such as vinegrettes 
  • Snacks.. stay away from processed// such as most granola bars, cereal, most chips (other than all natural/kashi is good)


Substitution List

Tips?
"Amy's" frozen dinners, burrito's or soups are organic and from what I understand/know-good for you! --YAY when they are on sale!

  • --Although best thing to do about soup is to make it from scratch in a crock pot and keep for throughout the week


Making smoothies?

  • Use almond milk
  • Throw in a handful of spinach (wont taste it)
  • Throw in some chia seeds

Limit your dairy intake

If you cannot pronounce the words on labels of ingredients, it is probably NOT good for your body. We are made to function with natural things, not with chemicals...
Fresh is always best. If you can't do fresh, then do frozen.

Don't have time to cook up stuff with veggies? Go to Kroger's salad bar (or heb) and grab some fresh cut up veggies and buy them --one lady got a whole bunch of veggies she needed that week cut up for only $2.80.

Plan for meals ahead, make a shopping list accordingly, and make Sunday evening your prep evening. 
Use that night to chop up things to throw in meals throughout the week, wash fruits and veggies, or to freeze etc.
(Hint, this would be a good time to make ahead the 40min rice for whatever meals needed that week). 

Buying a rotisserie chicken and peeling it at beginning of week.. can freeze half and keep the other half out in fridge: can make sandwiches, salads, lettuce wraps, throw in casseroles etc 

No you do not have to buy EVERYTHING organic but there are some things that are probably better to get organic. 

  • Example.. a tomato imported to Texas from California is going to take a little while and within that time the nutrition value goes down with each day. By the time it reaches Texas it is going to be sprayed with preservatives to make it look/taste "good" but the nutrition is down.
  • BUT! You can take a healthy vitamin daily to input the nutrition you miss in your daily intake of food (not that that should always supplement it but can help). 


The goal is to not get "skinny" it's to get HEALTHY! 

The first week will be tough because your body is getting use to not having any sugar when it has been addicted to it. Don't allow a few tough days push you back into your unhealthy routine. Push forward and it'll pay off!

Diets don't work! No matter what kind you do.. it won't work! Period! 
Reasoning is because you start on a diet and your body gets use to it and you lose weight. You get off of it then you start gaining a lot of weight again because you're not putting in your body the supplements and chemicals it was use to. 
You have to change your lifestyle to get permanent, healthy and natural results. 

Take all natural vitamins... Stay away from words you cannot pronounce

Suggestion: Combine this healthy new eating style with exercise.

375 oven: roll out dough, mix butter and olive oil and drizzle on dough, top iwth dough and sugar, bake for 20min.. sprinkle with pwdrd sugar

Cilantro Lime Chickpea Salad:
2 c cooked chickpeas. 2 c spinach. 1/4 c onion chopped. Lime uice. Cilantro, olive oil, salt pepper.
Food processor, grind up spinach, add everything together

meats, edemame, veggies, lettuce, spinach, organic spreads

Pita Pockets:
meats, beans, peas, veggies, salsa, lettuce

black beans, corn (other veggie), onion, tomato, organic penne, greek yogurt

layer casserole with sliced tomato, spagheti squash mixed with marinara, red bell pepper, carrot, onion, dump in dish and top with tomatoes

Fetuccini & Chicken:
fetuccini organic, chicken, sun dried tomatoes, parsley, basil, lemon, olive oil

Savory Chicken:
chicken, tomatoes, broth, onion, garlic cloves
4 c brocoli (add while cooking) -- CROCKPOT
(for freezer meal)split between 2 bags 
cook on low for 6 hrs, add brocoli during last 30min

Pesto Pasta:
organic pasta, broccoli, pesto

Bean Burgers:
black beans, corn, carrots, salsa, avocado, buns
process 2/3 can black beans, mix together that with adobo sauce (if can find), red onion, 2/3 can corn, 1/2 c panko crumbs, 1/2 c salsa.. form into patties and use on electric grill.. YUMMMM

Stuffed Bell Peppers:
green pepper, meats, seasonings, onion, celery, carrots, other veggies, rice, tomato sauce
(philly cheesesteak/mediteranean/ veggie/ italian/ mexican)
--can fix them then put in crockpot on high for 5-6 hrs or low for 8 hrs OR
bake in oven at 350 for 15min

Zucchini Boat:
4 med zucchinis, cut in half/ 1 tbsp oil/ 1 small onion/ 1 green pepper/ cumin/ chili powder/ shredded chicken/ enchilada sauce (tomato paste)
boil zucchinis for 1 min. hollow them out, and scoop in all added ingredients. bake in oven for 30 min at 350

Black Bean Pizza:
pizza crust/ dough. black beans. corn. tomatoes. green onion. cheese. avocado.
assemble. @400 for 20min

Sloppy Joes (re-do):
sandwich thins. bell pepper. onion. turkey meat. bbq sauce.. put all together and put in bread

Black Bean & Chicken Casserole
2 c brown rice. diced onion. zucchini. chicken. chopped celery. black beans. cayenne pepper. cumin. combine, cook covered at 350 for 30min

Bruschetta Chicken:
either put crumbs or italian sauce/seasoning on chicken and cook then put diced tomatoes basil, olive oil, garlic, place on top of chicken at end at 350 for 30 min

Porcupine Balls:
1lb ground turkey. 2/3 c milk. 1/2 c (half way cooked brown rice) 1 tbsp chopped onion. 1 can tomato soup. combine milk turkey and brown rice. put on pan, pour tomato soup over, cover and put in oven for 1 hr at 350

Asian Pork:
giner, garlic, soy sauce, sesame oil, tomato past, chicken broth
combine, marinade hcicken in it. put in slow cooker for 8 hrs

Lentil Casserole:
Lentils (can find dried at walmart or kroger.. just boil them/easy to make), feta cheese, tomato, green pepper
bake for 20min @350

Meat Stew:
2lb meat, 2 onions chopped, 5 carrots sliced, 3 zucchini chopped, 2 celery chopped, 2 bell peppers chopped, salt, pepper, canned tomatoes, 1 can tomato sauce
combine and cook on high crockpot for 4 hrs

Spaghetti Squash:
marinara sauce, squash, any other mixed veggies would like to add, any meats like to add, greek yogurt mixed in for creamier

Shrimp Stir Fry:
organic noodles, shrimp, lemon sauce, stir fry veggies (can use "soba" noodles)

Lettuce Wraps:
lettuce, meats, veggies, seasonings, tuna

Sausage and Peppers:
6 italian chicken sausages, 2 green pepper, 1 red pepper, 1 onion, tomatoes, italian seasoning
(for freezer meal) split between two bags
put olive oil on it and cook low 6 hrs

Fajita Wraps

Spinach Lasagna Rolls (freeze ahead):
9 lasagna noodles (cooked)
10oz thawed chopped spinach
15 oz fat free ricotta cheese/ 1/2 c parm
1 egg
salt/pepper/ 32oz tomato sauce
Mozarella (some)
combine spinach, ricotta, parm, egg, salt, pepper, take 1/3 c mixture and spread over noodles and roll carefully. 
place gently in ziploc bag. 
when ready to make, put them in a pan and pour over tomato sauce and top with mozarella. put foil over dish and bake for 60min at 350

Zuccini Pasta (can make with pasta maker)

No-Dough Pizza:
350 oven: 8oz cream cheese, 2 eggs, pepper, garlic powder, parm cheese, pizza sauce, moz cheese and meats. 
mix cheese, egg, pepper, pwder together, spread on baking dish, bake for 15min or until golden brown
spread pizza sauce on crust after 10min of cooling. top with cheese and meats, bake 10min

Mediteranean Dish:
brown rice (or quinoa), spinach, black eyed peas, red onion, tomato, topped with olive oil, fresh lemon, and pepper

Combined Meals:
tilapia, roasted sweet potato, broccoli
lemon chicken, roasted asparagus
lemon garlic chicken, mashed cauliflower
grilled chicken, black eyed pea salad
skewers
pot roast, carrots, celery
tilapia, quinoa, feta, cucumber, celery or peas
lentils, almonds, zucinni, steak, seasonings
orange chicken, asparagus

Fried Rice:
brown rice, carrots, broccoli, onion, edemame
LOW SODIUM soy sauce

Quinoa Cheddar Chicken:
garlic, tomato, tomato sauce, red pepper flakes, chicken, quinoa, cilantro red bell pepper
mix altogether and bake

Mexican Lasagna:
tortillas. brown rice. black beans. salsa. (corn substitute) --mix ingredients and layer

Veggie Lasagna:
veggies of choice, marinara
layer!

Cajun Shrimp Meal:
cajun seasoning, grilled shrimp, quinoa or mashed cauliflower, black beans, green beans

don pollo
1 3/4 C canned whole tomatoes
1 tbsp olive oil
4 boneless, skinless chicken breasts (1 1/2 lb total)
1/2 tsp salt
1/4 tsp black pepper
1 red bell pepper, chopped
1/2 C chopped onion
2 sm cloves garlic, minced
1 C brown rice
1 3/4 C chicken stock (we used Kitchen Basics)
1/4 tsp ground turmeric or paprika
1 bay leaf
1 C frozen baby peas, thawed
1/2 C chopped fresh basil
Directions
1.Put tomatoes (with juice) in food processor and process until coarsely chopped. Set aside.
2.Heat oil in large heavy frying pan over medium-high heat. Season chicken with 1/4 teaspoon of the salt and 1/8 teaspoon of the black pepper. Brown chicken breasts about 3 minutes per side. Transfer to plate.
3.Add bell pepper, onion, and garlic to pan and cook until softened, 5 minutes. Add rice and cook, stirring, about 1 minute. Stir in stock, chopped tomatoes, turmeric, bay leaf, and remaining 1/4 teaspoon salt and 1/8 teaspoon black pepper. Bring to a boil over high heat.
4.Reduce heat to medium-low, cover pan, and simmer 25 minutes.
5.Return chicken to pan and nestle into rice mixture. Cover and simmer 15 minutes longer.
6.Stir in peas and cook until rice is done, 5 minutes. Remove bay leaf. Serve sprinkled with basil.

perfect chicken
2-4 boneless chicken breasts with or without rib meat
1/2 t. salt
1/2 t. pepper
1/2 t. garlic powder
1/2 t. onion powder
1/2 t. paprika
2-3 T. olive oil
Mix salt, pepper, garlic powder, onion powder, and paprika in a small bowl (I use my old 1/4 cup). Coat the chicken breasts in the seasoning, rubbing in to coat. Pour olive oil in the bottom of a Dutch oven, and heat to med-high. When nice and hot, add chicken to the pan (in batches if necessary). Cook 2-3 min per side. If any chicken has been removed, add it back to the Dutch oven. Place uncovered Dutch oven in a 350 degree F oven for 25 minutes or until juices run clear. Let sit on a plate 5-10 minutes before cutting, shredding, or eating.

red bean sausage rice
1 pound dried red beans
7 cups water
1 green bell pepper, chopped $
1 medium onion, chopped $
3 celery stalks, chopped $
3 garlic cloves, chopped
1/2 pound andouille sausage, sliced
3 tablespoons Creole seasoning
Hot cooked rice
Garnish: sliced green onions--
Place first 8 ingredients in a 4-quart slow cooker.
Cook, covered, at HIGH 7 hours or until beans are tender. Serve with hot cooked rice. Garnish, if desired.

Oven-Fried Okra
adapted from family .com
    makes 7-1/2 C servings
16 oz bag frozen sliced okra, thawed {about 3 1/2 cups}
1 tsp Cajun or creole seasoning
1/2 tsp garlic salt
1 C yellow corn meal
Canola oil spray
1 gallon zip lock bag
pour okra in bag with cajun seasoning and garlic salt and shake. let rest for 10min. 
add cornemal and shake. let sit 10 mroe min. shake again and pour into strainer. put on baking sheet at 425  for 20min while fliping

Mashed Cauliflower

Cinammon Chickpeas:
canned garbanzo beans
place on parchment paper at 375, spread chickepas and bake for 40+ min. toss in olive oil, honey, cinnamon and nutmeg. put back in for 10min

brussel sprouts
cut into wedges/ place on parchment paper with olive oil and seasoning
bake for 15 at 400

Bruschetta Bread:
bread, smashed guacamole with tomato

Stuffed Tomatoes:
grape tomato (halved), stuff w/ ricotta, diced black olives on top with black pepper and crackers

Summer Veggie Pancakes: 
shred zucchini, carrots in a colander (stand 20min) squeeze out liquid. transfer veggies to large bowl and combine with 1/4 c flour, 1.1/2 tsp sugar, bit of pepper
beat egg whites with salt and fold into veg mixture
preheat cast iron pan with oil, work in batches of 1/4c at a time and flatten with spoon. cook until golden brown. top with greek yogurt mixed w/ basil

Green Bean Fries & Roasted Okra:
1lb green beans, 2 tbsp olive oil, bread crumbs and salt
Toss green beans in olive oil, lay them on sheet, sprinkle on breakcrumbs and salt and bake at 375 for 15min
(do same but with okra).. can do w/o crumbs

Rasberry Coconut Smoothie:
1 can light coconut milk (15oz)
1/2 c frozen rasberries 
2 tbsp water
dash of cinnamon and 2 tbsp honey. blend

Spinach Chips:
spinach leaves mixed with olive oil, salt, italian blend. line up on parchment paper. bake in oven for 8 min at 325, remove and let cool

Cauliflower:
1 head cauliflower
3 tbsp olive oil/ parsley/ garlic cloves/ lemon juice
mix everything together, toss it on cauliflower and layer on cookie sheet for 15 min at 475 (funtil golden brown)

Chickpea & Cucumber Salad:
1 can chickpeas/ half cucumber slced/ basil leaves/ olive oil/ sesame seeds/ paprika/ sherry vinegar/ chicken
--toss chickpeas, cucumber, basil, oil, vinegar, pepper. sprinkle chicken with sesame seed mix, grill and serve with chickpeas

Edemamae (in freezer section.. just heat up and eat, YUM)
